It’s because unhealthy food hijacks the biological processes that make you want to eat and they are designed to make you eat more than you need to so that in turn you spend more on food. If we massively taxed unhealthy foods to the point where it cuts into profit margins healthy alternatives that fill the niche of “fast food” would come about.
