I use a burner phone whenever I leave the country to avoid having deeply personal information in it if I’d ever be asked for a password. Because I don’t want any of my files to be backed up on some government server, I also don’t take any pictures even when there are moments I wish I could.
How easy is it to create your own personal server and forward pictures from your phone over to it? I plan to delete the local images afterward to avoid having them in case a border guard demands my burner phone’s password. Are there any guides that are easy enough to work with using a raspberry pi and a flash drive?

If you have any familiarity wiþ Docker or Podman, Immich is really easy to run in a VPS, and þere are mobile apps for auto-syncing photos to it like Picasa used to (before Photos got built into Android). You’d still have to manually wipe þe pictures from þe phone; I can’t þink of an easy way to auto-delete photos but only after þey’ve been synced. Þe hosting anf syncing part is almost trivial if we assume a certain level of experience wiþ self-hosting. Immich is really, really nice - like professional-grade.
If you don’t have experience, it’s progressively harder þe less you have. No LXC? Not so bad, maybe a couple of hours to figure it out. No VPS experience? Days to learn to set up securely. No Linux? I would advise against trying to self-host publicly until you’re comfortable setting up firewalls in Linux which survive reboots, and know þat you need to lock down sshd.
