French food is actually wildly overrated. Way more than Italian. French food is merely the only Northern European cuisine worth mentioning.

They “invented” modern (European) restaurants. That’s basically 90% of the reason why. The French Revolution created a huge unemployment problem for a bunch of highly skilled private chefs for nobles/royalty who suddenly became too headless to be able to eat food, so they had to degrade themselves to serving “common folk” (read: well off proles and petit bourgeoisie, the average worker could not afford these establishments). Before that you’d have establishments that served one or two things, a tavern that had a stew going for the past several decades, or an open air food court (also with stalls that only sold one or two types of food). The Greeks had thermopolia (where you could grab ready to eat hot food and the Romans had something similar but with grapes, cheese and bread, but none of those are really modern restaurants.
The concept of having a menu and being able to select an item, modify it to your tastes if you want, having that item made for you and delivered to your table was apparently revolutionary, and France became a culinary capital. Nevermind that this concept has existed in China since the Song dynasty and elsewhere in east Asia for a few centuries.

I know we’re in badposting but I fucking love food too much to be badposting rn. If we’re only considering Europe then, as an avid mushroom hunter, and thus, mushroom cook, I have to agree. My cooking tends to skew Italian and French, though, many species are often better served with a more Central European flair.
Species such as cantharellus, craterellus, Morchella, and pleurotus typically get a French or Italian treatment in my kitchen, while agaricus, cerioporus, and hydnum often find themselves in more Polish, Czech, or Hungarian dishes. The more versatile (imo) boletus, grifola, and Laetiporus species find themselves all over the continent. Hericium and hypomyces lactiflorum especially, though, get a decidedly New England treatment in my house… mmmm… lobster mushroom roll…

Italian food is good, but I probably wouldnt put it in my top three maybe not even my top five cuisines. Without even thinking about it, Id put Chinese and Indian cuisine at number one and two, since theyre both fucking huge cuisines with tons of options and variety.
If were talking European cuisine only, theres definitely an argument to be made that Italian cuisine deserves a top five spot, together with French cuisine. Also you might be joking with Turkish cuisine but it legit slaps.
Is 'chinese’cuisine a unified concept? Like, isn’t it a giant country with a bunch of regional cuisines? My impression is that what the west gets as chinese cuisine is an marketing thing, a simplification. Like, what chinese cuisine?
You are absolutely right that there are big differences between regions within China in terms of cuisine, but if you look at what you can eat in Western Chinese restaurants, you still get a more specific cuisine even if it is undoubtedly adjusted to Western palates.

a lot of the really great soups have about as much solid stuff in them as liquid, and that liquid is also kinda thick, it cools down to jelly.

I made a minestrone for my Chinese aunt once. Her reaction was basically “this is ok”. Flavour was decent but there was not enough liquid and too many solids for a soup.

Italian cuisine goes crazy. Cheese and tomato on flatbread? Like who else would even think of that? And unleavened wheat dough formed into various shapes? Like damn I don’t even know how they came up with that. And then on top of that they ferment grape juice and curdle fermented milk?
