When the AI demand dies down these companies will go back to making consumer/general purpose hardware and gamers will ravenously buy that shit up, because they haven’t been able to upgrade their rigs for years.

A shift in demand. If or when the AI market dries up consumers will be more than eager to be able to buy components again.
