I don’t understand how these glasses will work in the EU, where filming other people is against the law.
I think it’s only France where it’s explicitly banned. Mostly because otherwise CCTV cameras are legally complicated.
In most EU countries, the act of filming in public places is perfectly legal as there is “no expectation of privacy”. It only becomes a legal issue if you publish those videos, and even then it usually requires the person to be the focus of the video.

Just break the law and hope the other side is too poor to sue. Basically like everywhere else on the planet.
In data privacy cases there are ALWAYS people that will sue - there are collectives with money and lawyers.
In general yes, but if you claim a glasshole recorded you without consent and want to sue them, it’s on you to fund that legal battle. I doubt collectives are interested in individual cases.
Yes, they are. They often actually need individuals to make their case, I know of several examples.
I think no win no fee is commonplace in the EU.
In the case of France there’s two possible broken laws (not a lawyer btw):
If the glasses wearer upload the video/photo online, you are one of the primary subject of the frame (aka not just in he background), and didn’t consent to being on the internet, you can sue.
Companies must legally ask you for your concent to collect personal and identifying information. If the video/photo is sent to meta for big data/ai training, they must ask for consent
Edit: “primary subject” is kinda vague and may change depending on the context. If you do a VLOG and someone does something funny in the background, not aware of the camera, and the video is re-uploaded to only feature the guy, then it becomes the primary subject, and must be asked for concent
